Setting up a Worm Farm

I’ve just set up a worm farm to produce castings and liquid fertiliser to feed my container plants.

Regular composting has worked pretty well for me but requires a lawn to provide the carbon elements; the worm farm produces pure liquid and solid fertiliser, and can used in much more limited space.

I bought the Can-O-Worms direct from the nursery at Northey Street City Farm for $80, and ordered the worms from Kookaburra Farms. The worms turned up in a box in the post, not seeming to mind being shipped around halfway around Queensland.

Below is the Can-O-Worms in its packaging. It comes with three worm layers, a base to hold the liquid fertiliser, a lid, a tap and nut, five legs for the base, a manual, and compressed package of coir fibre.

Step one of the process was to put the brick of coir fibre (complete with paper packaging) into a bucket of water and let it soak while putting together the rest of the farm.

Step two was to add the attachments to the bottom layer of the farm: screwing the tap to the hole and fastening it with the nut provided, and sliding in the five plastic legs. The bottom layer isn’t for worms, but is where the liquid fertiliser collects (hence the tap).

Step three was to add the first of the worm trays to the base - and to wait for the coir fibre to soak up the water. When the coir was broken up and fully soaked, it looked like this:

Next the coir was spread over the first worm tray.

Then the worms and their compost were added on top of the coir fibre.

Together the coir and worms reached the top of the ribs on the inside of the tray, which meant I could go right ahead and add the second worm tray (the worms like to feed from the top, so will move on up into the next tray when the lower one is full).

I sprinkled a small handful of food scraps on the bottom of the second tray and covered it all with the cotton bag (wet) the worms came in, to keep them in the damp and dark as they like it.

I put the lid on, and (later) moved the farm out of the sun into a shadier part of the balcony. I stashed the third worm housing layer to be used as the farm fills up further.

Two days later, the worms have been busy turning the food scraps into worm castings.

Cockroaches in the Compost

A nice, easy customer question. I wish they were all like that.

Question: There are cockroaches in my compost. How do I get rid of them?

Answer: I asked the customer if the compost was dry looking. Customer said yes, so suggested wetting the compost with a bucket of water. The moisture will discourage the cockroaches and also encourage better decomposition of the contents.

Kangaroo Meat

Some people don’t like eating an animal that appears on the nation’s coat of arms. Knowing that they’re in abundance, tasty and environmentally sustainable convinces me that just because they’re a national symbol doesn’t mean they need to go to waste.

Most of the time I buy organic meat, but lately I’ve been buying some from the supermarket since I found kangaroo mince and sausages there. It’s cheap, low-fat, Australian, sustainable and good for the environment - if you’re a meat-eater, what more could you want?

Worm Farm Rebate

I’ve been looking into getting a worm farm so I can produce liquid fertiliser to feed my container plants.

I’ve since discovered that the Queensland Government is providing a rebate of 50% or up to $50 for the purchase of the farm (though not the worms). So if you’ve been procrastinating on buying one, like me, you have until December to pull your finger out and get one for half price.

Planting Guide for Brisbane

A rough annual guide to when to plant vegetables in Brisbane. Times will change slightly depending on where you are and what your local microclimate is like, but this is roughly what works for me.

All Year Round

Some veggies can be grown all year round but may require special care at times to do their best. For example, lettuces do best in cooler times of year but can also be grown in summer under shadecloth if the water is kept up to them. They will bolt faster than in winter – but summer is the season when salad greens are most wanted for meals anyway.

I like to plant lettuces every two weeks to ensure a constant supply. They’re relatively fast to grow and pull out (though not as fast as radishes, which will also grow most of the year) so can be used to fill in gaps between slower growing brassicas or other veggies.

Shallots can also grow all year round in Brisbane, as can sweet potato and carrots (barring the hottest months of the year).

SUMMER

January

It’s usually very hot at this time year – grow greens under shadecloth but otherwise let the summer crops grow and keep the water up to them.

February

Plant brassicas (cauliflower, broccoli, kohl rabi, cabbages) in seed trays and protect from possums. They will be ready to plant out in mid-March when the weather is a little cooler.

AUTUMN

March & April

Mid-March and April are the peak planting times for the year in Brisbane, as the heat of the summer is over and the humidity is less, meaning there are less pests and diseases and less sun scorching and wilting. This is when the broccoli and cauliflower seedlings should go into the garden, in a well fertilized spot (following the chicken tractor is best).

It’s also a good time to plant another round of tomatoes and capsicums. In summer tomato pests are everywhere (particularly fruit fly), but by autumn there is a better chance of getting to eat the crop. Zucchinis are also worth trying; in humid summers they succumb quickly to powdery mildew but may fare better over autumn and winter.

Potatoes can also go into the ground. Don’t plant them in the same place as last year to lessen the risk of disease.

Vegies that prefer cooler temperates now go into the garden in April. Celery, onions, turnips, peas, leeks, garlic, beetroot, and less hardy greens like lettuces, spinach and Chinese greens.

Plant strawberry runners.

May

Continue planting the same veggies as in April, progressively to ensure that the crop is spread over weeks rather than harvesting a huge glut at the same time.

WINTER

June

More potatoes can go in, as can more peas (it’s hard to have a crop of too many peas over winter – they usually don’t even make it inside for meals), and winter greens like spinach. More turnips can be planted, they prefer cold weather but will be finished by September.

July & August

Maintain the growing garden and harvest the faster growing winter crops: lettuces, greens, radishes, beetroot, kohl rabi. Harvest potatoes, and in August begin to harvest the broccolis and cauliflowers.

SPRING

September

Spring is here and it’s the time to plant asparagus. Choose a spot that won’t be in the way as it’s a perennial – it will be in the same spot for years.

In go the crops for summer. Plant pumpkins, rockmelon, watermelon, button squash (and zucchini, if you have a breezy spot for it and plenty of room for it to spread out without crowding, to reduce the chance of powdery mildew).

October

Progressively plant more summer crops

November

Plant hot season crops like snake beans and Ceylon spinach.

BEGINNING OF SUMMER

December

Progressively plant hot season crops. Shade plants that need it and keep water up to fruiting veggies like watermelons and pumpkins.

Pumpkin Soup

Here’s my rough recipe for pumpkin soup. It’s not quite a pure pumpkin soup as I prefer a slightly deeper flavour and thicker texture.

All quantities are approximate, feel free to change them to suit your own taste.

1/3 of a pumpkin
1/2 a sweet potato
One potato
1/2 an onion
Small knob of ginger
Olive oil

Peel and chop the pumpkin, sweet potato and potato.
Steam all the vegies until very soft.
In a large saucepan, fry half an onion in a small amount of olive oil until transparent.
Add the ginger and fry it gently until you smell the ginger aroma.
Add the steamed vegetables and the water from the bottom of the steamer to the saucepan.
If there’s not enough liquid, add more water.
Simmer the lumpy vegetable mixture until it breaks down to a more soup like texture.
Put in the blender and blend until smooth.
Put it back in the saucepan to stay warm. (Lower the temperature if you do this - it boils like lava at this stage. and can be messy).
Or serve immediately and eat with a dollop of yoghurt on top.

To begin - what actually is yoghurt?

Yoghurt is basically milk fermented with a specific strain of bacteria (usually Lactobacillus acidophilus and Streptococcus thermophilis), that turns the lactose into lactic acid and so the milk into yoghurt.

This is a simple process in theory, milk is just heated to a warmish temperature, the starter bacteria culture added, and its left at a constant temperature for the bacteria to do their thing.

In practice, it might be simple, but there are lots of slightly different ways of doing it.

How I discovered this method

I’d been wanted to start making my own cheese for a while, and yoghurt making seemed the 101 place to start to get the hang of the very basics (ie it has three main steps in the process, instead of fifteen).

So I looked online for how to make it, and then got very confused by the millions of recipes and methods people used.

Some used powdered yoghurt strains, some used frozen, some mixed in milk powder, some used hospital levels of cleanliness with consistent results, some didn’t. Some people heated their milk, others didn’t.

Then there was keeping it warm - some kept it warm in the oven, others wrapped towels around it, put them on heating pads or hot water bottles, and yet others were put in a cosy bath in an esky and topped up with hot water.

Then there’s what seems to be the most popular method, a brand name set up called the Easi-yo. I’ve heard they work pretty well, but I wanted to try it without buying specialised equipment, thermometers or sachets etc (and I couldn’t find an Easi-yo for less than $30). So I combined bits of all the recipes to find the easiest way for me to make it.

Which starter to use

I use Jalna Biodynamic as my starter. I bought a 200g container of their yoghurt for about 4 dollars, and froze it up in ice cube trays to keep as a starter.

Some people say you can’t use frozen starter and its needs to be fresh each time, but it works for me. I think cleanliness comes into it - ie don’t handle the cubes with your fingers.

One jar of starter makes enough starter for me for about 10 batches of yoghurt, so it works out pretty economically. I worked out that it costs about $1.50 for the milk, 40 cents for the starter and 50c for the powdered milk, so you get a litre for less than $2.50, and you know exactly what is in it.

Yoghurt Recipe

  • 1 litre milk
  • 5 tablespoons of powdered milk
  • 2 tablespoons of fresh yoghurt (or roughly 4 ice cubes of frozen yoghurt starter)
  • Boiling water
  • Double boiler (or a mixing bowl over a saucepan containing boiling water)
  • Measuring jug (for pouring milk into the thermos)
  • Thermos (preferably wide-mouthed)
  • Towel (to wrap the thermos)

Method

  1. Take out the starter to defrost on a saucer if you’re using frozen starter.
  2. Fill the thermos with boiling water to sterilise it and pre-warm it.
  3. Use some boiling water to pour over the jug, and any saucers or utensils you’re using. Set them aside in a clean spot.
  4. Mix the milk and powdered milk. This is optional but I do it because I like thick yoghurt and it increases the calcium content. You can also use gelatine apparently.
  5. Put it over the double boiler. You can heat it directly but this way you don’t have to stir it constantly or worry about it burning, just check it occasionally.
  6. Heat it up to near boiling - ie once the milk starts steaming and collecting bubbles around the edges.
  7. Take the saucepan off the heat for a few seconds so you don’t burn your fingers with steam and transfer the bowl to the sink.
  8. Let it sit for 20 minutes or so to cool down. The technical temperate is 41 - 48 degrees F, but ‘comfortably warm’ is the non-technical temperature and the one I use. Just check the bowl now and then until it feels nice and warm - not uncomfortably hot or cold.
  9. Don’t worry too much if it cools down too much while you’re watching tv - just heat it back up again and let cool to the right temperature.
  10. Pour a bit of your warm milk into the measuring jug and add the starter. Mix well without frothing it up too much to get rid of any lumps.
  11. If using frozen starter - drain off the excess water from the starter - don’t mix it in.
  12. Pour the yoghurt-y milk into the rest of the milk. Mix well.
  13. Pour into the thermos to a level below the seal and close it up. Don’t let it touch the seal, they’re hard to clean and if it has any mould it will affect the yoghurt.
  14. Wrap it in a towel and leave it in a quiet spot without disturbing it for 6 - 12 hours. Times vary a bit depending on the temperature you added your starter - if it’s on the cool side it will take longer - and the amount of starter you used - if you use more it won’t take as long.
  15. You can tell if it’s done by the feel - it will have a more solid feel in the thermos.
  16. After that time it should be set. Scrape or pour it out of your thermos depending on thickness (if you bought a wide-mouth this will be much easier!) and put it into the fridge to chill. It will get a little bit firmer once it cools down as well.

That’s it. It’s a simple process but can take a bit of experimentation to find out how much starter you need balanced with the right amount of time and right taste.

Possible Problems in Yoghurt Making

Onto possible problems you might encounter with yoghurt making. The two major problems that I’ve found to cause failures are the lack of cleanliness and old starter.

This is because what you’re really doing with all this heating, cooling, and keeping warm is providing the right environment for the culture of the yoghurt bacteria to breed for a few hours - and not any other bacteria strain.

Cleanliness is REALLY important, as you don’t want to breed other strains of nastier bacteria in there with your lactobacillus. If you do, you get runny yoghurt or strange tasting yoghurt.

As for old starter - yoghurt usually only lives for ten days or so, so if your batch is old it isn’t going to work. You can also only use the same strain a few times before it gets contaminated, meaning you can only make yoghurt from your yoghurt a few times before you need fresh starter.

Leaving it too long can cause issues too - it will get too tangy with some strains, the whey will start to separate, or with the Jalna, which doesn’t have as strong a taste, will just form small chunky bits instead of being a really nice smooth thickness like custard.

Uses For Yoghurt

If you’re keen and have heaps of yoghurt, you can also make a yoghurt ‘cheese’ called Labneh, which is used a bit in Middle Eastern dishes and can be a dip or dessert or cream replacement.

All you need to do is have a fairly thick yoghurt and then draining it in cheesecloth over a bowl (to catch the whey).

This isn’t really like cheese in my opinion, but more of a heavy-cream with a yoghurt flavour and less of a fatty taste. It’s absolutely delicious with desserts and I’d guess a lot better for you than real cream.

Though you do lose a lot of the weight of the yoghurt in the whey (the liquid that drains out) and it makes a surprisingly small amount of cheese.

Anyway, there are a million ways to make yoghurt; this is just mine. Feel free to experiment and tweak the method to whatever suits your equipment and taste.

Growing Sprouts

The ultimate saving in space and funds is the growing of sprouts. Start with one, such as alfalfa, and have fresh, crisp sprouts for sandwiches and salads. A tablespoon of seeds will provide you with cups of sprouts within three to five days.

How to Grow Sprouts at Home

This is the lazy person’s method for growing sprouts - and how I grow them in my own kitchen.

To make your sprouts, simply put the seeds in a large jar, the mouth of the jar covered with cheesecloth. Cover the seeds with water and leave overnight. Tip out the water and roll the jar around a bit to coat the sides of the jar.

Each day after that, rinse the sprouts and put them back. When they are a few centimetres long and look like edible sprouts, rinse as usual and drain the sprouts very well. Then just replace the cheesecloth with plastic wrap, and put your jar of sprouts into the fridge.

Types of Sprouts

Alfalfa

These are really economical to grow. A bag of nearly half a kilo of alfalfa seeds are less than five dollars from Eden Seeds, and that will keep you in salad and sandwich sprouts for months on end for the cost of two packets from the fruit shop. One tablespoon of seeds becomes more than a cup of sprouts, and they keep in the fridge well.

Other Types

There are plenty of other seeds you can sprout in your kitchen in a similar way: mung beans, soy beans, sunflower seeds, wheat. It depends on your taste and how keen you are; my own next project is going to be growing mung beans from seed to make my own beansprouts.
